RKO Family Special Homemade Pancakes – watching the Rose Bowl Parade 2016

Each year, my daughters hosted a Christmas party. But not just any Christmas party. It was a spend-the-night extravaganza complete with our famous RKO Family Special Homemade Pancakes.

The pancake recipe came from my mother’s Fannie Farmer Cookbook. While I don’t remember seeing the recipe, my mother dictated the recipe over the phone to me many years ago. I named these pancakes “special” because they were always served during the Christmas party with one special ingredient.

This is a simple pancake recipe that is so much better than a mix! Try this out and let me know what you think!

RKO Special Homemade Pancakes

Ingredients

  • 2 tablespoons butter, melted
  • 1 egg
  • 2 tablespoons sugar
  • 1 teaspoon Vanilla Extract (this is the “special” ingredient”)
  • 1/2-3/4 cup milk
  • 1 cup self-rising flour

Directions
Wisk the milk, butter, vanilla and egg in a mixing bowl. Mix in the flour until moistened. The batter will be lumpy.

Baking Tip

For the batter to taste extra special, use a Mickey Mouse waffle iron or animal shaped molds. No kidding. The animal shaped pancakes were always a hit. The elephant shape was always a hit, but so hard to keep the trunk attached – see all of my molds in the picture background! When I purchased the Mikey Mouse waffle iron, it was truly game on! Every single girl wanted the Mickey Mouse waffle over the heart shaped waffle or regular pancakes. It’s just fun.

Serving Tip

Use the good china and let them sit in front of the tv. I used the Lenox Christmas China, and it was so nice to do that. I decided that if the dishes were broken by the girls, then that would be ok. It was a lot of fun to use them!

Use the Good China – 2004

When making this recipe, I always quadruple the ingredients. Our family had our special pancakes while watching the Rose Bowl Parade a few weeks ago – I even quadrupled the recipe for the 4 of us. The left overs freeze beautifully! Just pop them in the toaster and you have breakfast for coming week!
